sparkling wines Champagne is a Sparkling Wine, but it must come from the Champagne region of France, to be called Champagne. The bubbles are formed during a second fermentation process, sealing in the carbon dioxide that is formed when yeast converts sugar into alcohol, making millions of bubbles with no place to go.
Food Pairing
Mild and strong cheeses, spicy Asian dishes, seafood, pizza and Mexican food, chips, nuts and popcorn, all pair surprisingly well due to the saltty nature.

TERRA SAVIA ~ Blanc De Blancs
Made exclusively from organic chardonnay grapes, harvested early for their lemon meringue pie flavor. Once bottled and fermented in the bottle, the wine stays on the yeast for a minimum of 30 months adding a subtle smell of fresh baked bread. These wines will age well into the next decade and they reveal more of their lemon meringue origins.
