SPARKLING WINES
Champagne is a sparkling wine, but it must come from the Champagne region of France, to be called Champagne. The bubbles are formed during a second fermentation process, sealing in the carbon dioxide that is formed when yeast converts sugar into alcohol, making millions of bubbles with no place to go.

PORT WINES
Port wine is typically richer, sweeter, heavier, and possess a higher alcohol content than most other wines. Commonly served after meals as a dessert wine, often with cheese. White and tawny ports are often served as an apéritif.

Mendocino's Rosés Pink-colored wines, either made from red grapes, allowing the skin to remain in the fermentation for only 12-36 hours, or by mixing red and white wines. Also known as blush wines.
